Key Responsibilities
  • Break down whole carcasses into standard retail cuts, trim, slice and prepare meat for customer display
  • Create and prepare smallgoods (cured meats, etc.) if required
  • Prepare and package products with proper portioning, garnishes, sauces, and labelling
  • Regulate and maintain cooking and curing equipment temperatures as needed (if facility includes those processes)
  • Store meat and smallgoods in temperature-controlled facilities to ensure safety and quality
  • Work to special dietary and customer requests (e.g. trimming for fat, packaging for dietary restrictions)
  • Maintain high standards of cleanliness in preparation areas, cutting tools, and display fronts
  • Perform stock takes, liaise with suppliers, and ensure fresh deliveries
  • Train junior butchery staff or assist apprentices under supervision
Skills, Experience & Qualifications
  • Minimum two years of relevant work experiences, OR a Level 4 qualification or above
  • Strong knowledge of food safety, hygiene and workplace safety standards
  • Good customer service skills, ability to communicate with team and customers
  • Ability to handle sharp tools and equipment safely
  • Physically fit for work involving standing, lifting, and repetitive cutting tasks
