Sails Restaurant is seeking an experienced and motivated Senior Bartender to join our team. Known for our premium dining experience, we offer an exceptional selection of wines, cocktails, and beverages, and we’re looking for someone who can deliver outstanding service while supporting the smooth operation of our bar. This is a permanent full time role of at least 30 hours per week working on a roster basis. We are currently open Wednesday - Sunday. 

Key responsibilities

  • Prepare and serve a wide range of alcoholic and non-alcoholic beverages, including cocktails, wines, coffee and specialty drinks
  • Provide knowledgeable recommendations, including accurate wine/food pairings and premium product suggestions
  • Deliver exceptional customer service and create a welcoming, professional environment
  • Supervise and support junior bar staff during service
  • Ensure compliance with host responsibility requirements and the Sale and Supply of Alcohol Act
  • Monitor stock levels, assist with inventory control, and support ordering processes
  • Operate the point-of-sale system and process transactions accurately
  • Maintain cleanliness and organisation of the bar area to a high standard, including restocking of the bar as needed (can involve heavy lifting)
  • Support front of house operations during busy periods
  • Contribute to a positive, safe, and energetic team environment

Skills and experience required

  • At least 1 year of bartending experience within a restaurant or food service environment
  • Strong experience in cocktail preparation & knowledge of wine, spirits, and non-alcoholic beverages
  • Ability to provide confident beverage recommendations and accurate wine/food pairing advice
  • Experience supervising or supporting junior staff
  • Excellent customer service and communication skills
  • Ability to work efficiently under pressure with excellent time management, efficiency and multitasking skills.
  • Strong attention to detail and commitment to quality
  • Excellent command of the English language

  • General Manager’s Certificate (Sale and Supply of Alcohol Act)
  • Experience in training or mentoring staff
  • Strong organisational and time management skills
  • Professional presentation and a positive attitude
  • Reliable and adaptable
